I have a pantry filled to capacity. The culprit? Salsa! When I’m wandering through the grocery store, specialty food shop, or meat market, I usually find myself in the section that contains those wonderful, home-style salsas. With a passion for all things salsa, I figured that a crockpot salsa chicken dish would be an instant winner. I was right! If you like a hearty sausage and bean dish, you have got to try this sausage bean skillet. I came across it a couple of months ago and it has been a regular on our dinner table ever since. I drain any of the fat out after browning the turkey sausage, but I don’t bother “washing” it as suggested in the recipe. A little bit of fat ads more flavor to the dish and since I’m using turkey sausage, it’s pretty lean to begin with. I’ve made this dish with a variety of different beans from lima and great northern to kidney and pinto beans. It’s even good with black beans. I just use whatever beans I have sitting around.
