I have a pantry filled to capacity. The culprit? Salsa! When I’m wandering through the grocery store, specialty food shop, or meat market, I usually find myself in the section that contains those wonderful, home-style salsas. With a passion for all things salsa, I figured that a crockpot salsa chicken dish would be an instant winner. I was right! And talk about being simple… anyone can throw together a five-star meal with just two ingredients. That’s what I call family-friendly.

The first time I tried a salsa chicken recipe, I thought the flavors might cook away in the crockpot. But, I should have known better. Your crockpot recipes won’t destroy the wonderful, savory, and spicy richness of most salsas. My advice is to buy a salsa that you would eat right out of the jar and find it hard to stop. That’s the salsa that will hold up under any crockpot recipe. We have also tried this simple salsa chicken crockpot recipe using drumsticks for a real fun, and messy, picnic lunch. No matter how you make it, this is a sure-to-please meal.
