If you like a hearty sausage and bean dish, you have got to try this sausage bean skillet. I came across it a couple of months ago and it has been a regular on our dinner table ever since. I drain any of the fat out after browning the turkey sausage, but I don’t bother “washing” it as suggested in the recipe. A little bit of fat ads more flavor to the dish and since I’m using turkey sausage, it’s pretty lean to begin with. I’ve made this dish with a variety of different beans from lima and great northern to kidney and pinto beans. It’s even good with black beans. I just use whatever beans I have sitting around.
If you are running short on time, you can certainly make this dish with whatever canned beans you have sitting in your pantry, but I prefer freshly cooked ones. Just use one of your favorite bean recipes, or just boil dried beans in slightly salted water until they are tender. Smaller beans usually cook up faster than larger ones. Read the package instructions for approximate cooking times.
